The alcoholic fermentation process can affect the yeast’s metabolism. High osmotic pressure, nutrient deficiency, temperature fluctuation and a high alcohol environment can all put pressure on the yeast. This can result in struggling ferments, reduced aromatics, sulphide production and spoilage.
